Chef De Partie Job SummaryWe are seeking an experienced and skilled Chef De Partie to join our culinary team. The successful candidate will be responsible for directing, coaching, and supervising kitchen staff, as well as maintaining the highest standards of food quality and presentation.About The RoleDirects, coaches, supports, supervises, and evaluates all direct reports.Maintains excellent food knowledge and a thorough understanding of culinary terms.Reads, understands, follows, and prepares company recipes while ensuring consistency in taste according to corporate office instructions.Works efficiently and productively to complete tasks.Coordinates and supervises team members assigned to their section, assigns, and delegates tasks accordingly.Reviews recipes daily and maintains immaculate recipe folders.Follows through on requests from supervisors or managers; this may include show plates, food samples, and random tastings.Controls production levels and recommends improvements and cost-saving ideas.Overses main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and their entire food production.Maintains Public Health standards according to company expectations (US, Anvisa, Shipsan, Canadian, Australian etc.) within their section.Ensures the HACCP program is carried out correctly.Prepares their area for inspections, whether announced or unannounced by Food & Beverage Directors or inspectors.Reports for duty at assigned times and adheres to supervisor's instructions, personal appearance, uniform, and hygiene requirements.Requirements And QualificationsA minimum of 8 years' experience in upscale hotels, resorts, cruise ships, or convention banqueting services, with at least 2 years as a Chef de Partie (shipboard experience preferred).A culinary school degree is required.Strong management skills in multicultural and dynamic environments.Excellent communication, problem-solving, decision-making, and interpersonal skills.Superior customer service, teambuilding, and conflict resolution skills.Knowledge of personalized service principles, including needs assessment techniques, quality service standards, alternative delivery systems, and guest satisfaction evaluation techniques.Planning, coaching, organizing, staffing, controlling, and evaluating skills.Possess a good understanding of basic accounting principles such as numbering flow, 'Debits/Credits', adjusting entries, and corrections.Ability to write reports and business correspondence and establish a rapport with Senior Officers and the corporate office.
