Job Overview: We are looking for an experienced and passionate Maharashtrian Cuisine Cook who is well-versed in preparing a wide range of authentic Maharashtrian vegetarian and non-vegetarian dishes, including traditional thalis, mutton and chicken specialties, and everyday regional delicacies. The ideal candidate should possess strong culinary skills, a deep understanding of Maharashtrian spices and cooking methods, and the ability to manage kitchen responsibilities efficiently.Key Responsibilities:1. Food Preparation – Maharashtrian Specialties Prepare a full range of Maharashtrian vegetarian and non-vegetarian dishes, including: Veg Dishes: Pithla, Bhakri, Zunka, Bharli Vangi, Batata Bhaji, Poha, Misal, Kanda Bhaji, etc. Non-Veg Dishes: Chicken Rassa, Mutton Sukka, Mutton Kala Masala, Kombdi Vade, Gavran Chicken, etc. Thalis & Festive Platters: Assemble complete Maharashtrian thalis with proper presentation and portioning Prepare accompaniments like chutneys, thecha, solkadhi, varan-bhaat, and seasonal sabzis 2. Kitchen Operations & Cleanliness Ensure clean, hygienic, and organized kitchen conditions at all times Manage daily mise en place, cutting, marination, spice grinding, and cooking schedules Coordinate with kitchen staff and helpers for smooth service during peak hours Maintain utensils, equipment, and cooking areas as per food safety standards 3. Ingredient & Inventory Management Monitor the freshness and quality of vegetables, meats, and spices Assist in ordering, receiving, and storing kitchen supplies Reduce food waste by proper planning and portion control 4. Menu Development & Customization Suggest and develop new seasonal Maharashtrian dishes as per trends and customer preferences Modify spice levels and ingredients to suit customer needs (on request) Innovate within the traditional framework to create fusion or premium offerings 5.
