Job Description Prepare and cook authentic Kerala and South Indian dishes such as:   a)   Appam, Dosa, Puttu, Vada, Idly, Kerala style Evening snacks, Avial, Sambar, Rasam,  Thoran, Fish curry, Kerala parotta, Biriyani, Beef and Special Chicken Items, etc.   b)   Manage Mise en place and daily prep for sauces, gravies, and chopped Vegetables.   c)    Handle à la carte cooking, ensuring freshness and consistency.   d)    Candidates Must have the A la Carte Sauce knowledge:   ∙ Red Gravy (Tomato Base) Makhani gravy For Butter masala   ∙ Brown Gravy   ∙ Yellow Gravy (Korma Base) For Korma   ∙ Green Sauce   ∙ White Gravy (Malai Base)   ∙ Spice pastes for chutney.   ∙ Coconut chutney base   ∙ Tomato chutney base.   e)   Plan and maintain menu items and daily specials.   f)    Monitor inventory, manage food costs, and coordinate with procurement.   g)   Maintain hygiene and sanitation standards as per FSSAI norms.   h)   Train and guide junior staff, helpers, and commis chefs.   i)     Ensure timely and quality service during breakfast, lunch, and dinner services.        Required Skills & Experience:   a) Minimum 2–5 years’ experience in a South Indian or Kerala kitchen.   b) Expertise in traditional cooking methods: steaming, tempering, roasting, etc.   c) Familiar with regional spice blends, coconut-based gravies, tamarind, curry leaves,  etc.   d) Experience with both vegetarian and non-vegetarian preparations.     Knowledge of commercial kitchen equipment and food safety standards.   Ability to multitask during peak hours and maintain plating consistency.     Requirements Preferred Qualifications:   a) Culinary diploma or certification (not mandatory if skilled)   b) Prior work experience in hotels, resorts, or fine-dining South Indian restaurants   c) Basic knowledge of English or Hindi (Malayalam or Tamil is a plus)   Benefits Good Salary and Other benefits Requirements Minimum of 3 years of experience and skills in A la carte cooking and plating Strong attention to detail with high standards for flavor and aesthetics Ability to manage time effectively and multitask in a fast-paced environment
