- Assign in detail specific dutiesto all employees under his/her supervision and instructs them intheir work
- Ensure personal cleanliness andproper deportment of all team members
- Workclosely with the Executive Chef in determining quality and quantityof food materials used with a view of eliminatingwastage
- Discuss with the Executive Chef andrecommends menu price adjustments
- Check thetaste temperature and visual appeal of food items prepared toensure that the quality and portion are consistent and as perspecifications set out.
- Ensure that allequipment and perishable items are stored in its designated placeand is done in the most hygienic manner
- Preventthe use of contaminated products in any phase of food preparationand prevent colleagues who are ill or suffering from an infectionfrom taking part in the preparation or handling offood
- Suggest new recipe/products which mayimprove quality of food or lower foodcost
- Check the maintenance of all kitchenequipment
- Ensure that all safety healthsecurity and loss control policies and procedures and Governmentlegislation are adheredto
