A Chef de Partie manages a specific station in the kitchen, overseeing the preparation and cooking of food for that area to ensure high quality and consistency

Key Responsibilities:

  • Kitchen Station Management:

Lead a specific kitchen section under the leadership of the kitchen Sous Chef (e.g., sauces, fish, vegetables, pastry) and ensure all dishes prepared in that section are of high quality.

  • Food Preparation and Cooking:

Prepare ingredients, cook specific components of dishes and ensure all cooking adheres to standard recipes and culinary guidelines.

  • Supervision and Training:

Supervise and train commis chefs within their designated section.

  • Quality Control:

Monitor and maintain food quality, portion control and consistency for all dishes served from their section.

  • Hygiene and Safety:

Maintain a high standard of personal hygiene and ensure the kitchen station is kept clean, sanitary, and safe, complying with food safety regulations.

  • Inventory and Costs:

Assist with managing food stock, controlling inventory and monitoring food costs to minimize waste and maximize profit margins.

  • Collaboration:

Work closely with the Sous Chef, Executive Sous Chef and Head Chef to support daily kitchen operations, menu planning and the implementation of new dishes and concepts.

  • Operational Duties:

Set up their station before service, prepare all necessary ingredients and equipment, and clean the station thoroughly after service.

  • Ability to work calmly and efficiently under pressure.
  • Good communication and leadership abilities.
