Job Title: Commis Chef – South Indian Cuisine

Department: Food & Beverage Production

Location: Le Pondy Beach Resort, Puducherry

Reporting To: Chef de Partie / Sous Chef

Job Summary:

As a Commis Chef specializing in South Indian cuisine, you will assist the culinary team in preparing authentic and high-quality South Indian dishes. You will work under the guidance of senior chefs, maintain hygiene standards, and contribute to delivering an exceptional dining experience to our guests.

Key Responsibilities:

  • Prepare a variety of South Indian dishes such as dosa, idli, vada, pongal, sambar, rasam, poriyal, avial, etc.
  • Support senior chefs with daily mise-en-place and food production tasks.
  • Follow standard recipes, presentation guidelines, and portion control procedures.
  • Ensure cleanliness and sanitation of the work area and kitchen equipment.
  • Comply with food safety standards and hygiene regulations (FSSAI compliance).
  • Handle ingredients with care, label and store them appropriately.
  • Assist in buffet setups, live counters, and special themed events.
  • Minimize food waste through proper planning and preparation.
  • Participate in internal training and maintain a learning attitude.

Requirements:

  • 1–2 years of relevant experience in a hotel, resort, or restaurant.
  • Certification in culinary arts or food production is preferred.
  • Sound knowledge of South Indian culinary techniques and spices.
  • Ability to work in a fast-paced kitchen environment.
  • Willingness to work shifts, weekends, and holidays.
