Job Title: Commis Chef – South Indian Cuisine
Department: Food & Beverage Production
Location: Le Pondy Beach Resort, Puducherry
Reporting To: Chef de Partie / Sous Chef
Job Summary:
As a Commis Chef specializing in South Indian cuisine, you will assist the culinary team in preparing authentic and high-quality South Indian dishes. You will work under the guidance of senior chefs, maintain hygiene standards, and contribute to delivering an exceptional dining experience to our guests.
Key Responsibilities:
- Prepare a variety of South Indian dishes such as dosa, idli, vada, pongal, sambar, rasam, poriyal, avial, etc.
- Support senior chefs with daily mise-en-place and food production tasks.
- Follow standard recipes, presentation guidelines, and portion control procedures.
- Ensure cleanliness and sanitation of the work area and kitchen equipment.
- Comply with food safety standards and hygiene regulations (FSSAI compliance).
- Handle ingredients with care, label and store them appropriately.
- Assist in buffet setups, live counters, and special themed events.
- Minimize food waste through proper planning and preparation.
- Participate in internal training and maintain a learning attitude.
Requirements:
- 1–2 years of relevant experience in a hotel, resort, or restaurant.
- Certification in culinary arts or food production is preferred.
- Sound knowledge of South Indian culinary techniques and spices.
- Ability to work in a fast-paced kitchen environment.
- Willingness to work shifts, weekends, and holidays.
