Commi Chef Continental

The Commis I – Chinese is responsible for preparing, cooking, and presenting Chinese dishes as per restaurant standards. The role ensures consistency in taste, quality, hygiene, and presentation while supporting the kitchen team in smooth operations.
Key Responsibilities
- Prepare and cook Chinese dishes such as stir-fries, noodles, fried rice, dim sums, gravies, and wok-based items.
- Ensure all mise-en-place is prepared on time and maintained throughout the shift.
- Follow standard recipes and maintain consistency in taste and presentation.
- Maintain cleanliness and hygiene in the Chinese section as per FSSAI and company standards.
- Check freshness and quality of ingredients before use.
- Assist Chef de Partie and Sous Chef in daily kitchen operations.
- Handle equipment like wok burners, steamers, fryers, cutting tools safely and efficiently.
- Store ingredients properly with proper labeling and FIFO method.
- Monitor wastage and contribute to cost control.
- Follow all safety, sanitation, and hygiene procedures.
- Support other kitchen sections when required.
Skills & Requirements
- Minimum 2–3 years of experience in Chinese cooking (wok / dim sum / gravies / noodles).
- Knowledge of basic Chinese sauces, techniques, and ingredients.
- Ability to work in a fast-paced kitchen environment.
- Good communication and teamwork skills.
- Understanding of food hygiene, safety, and kitchen discipline.
Education
- Diploma in Culinary Arts / Hotel Management preferred.
- Formal training in Chinese cuisine is an added advantage.
