Role Overview
The General Manager (GM) at Kakal Kai Ruchi is the strategic and operational leader responsible for driving the group's expansion from 10 to 100 outlets across India by 2030, with a mix of 60 FOCO (Company Owned) and 40 FOFO (Franchise Owned) models.
This position plays a pivotal role in scaling the KKR brand into a 400 Cr national QSR and casual dining powerhouse, while maintaining its authentic South Indian culinary identity and high operational standards.

Key Responsibilities
1. Strategic Expansion & Business Development
- Lead and execute the Pan-India expansion plan targeting 100 outlets by FY2030.
- Develop the FOCO & FOFO franchise framework, investment structure, and ROI models.
- Identify and negotiate strategic real estate and franchise partner opportunities.
- Oversee Master Franchise setup and ensure investor compliance with brand standards.
2. Operational Excellence
- Drive outlet-level profitability with 12–20% EBITDA margins across all clusters.
- Maintain food cost between 33–43% and employee cost 15–20% benchmarks.
- Oversee supply chain optimization, central kitchen efficiency, and vendor performance.
- Implement standardized SOPs, audits, and periodic quality reviews.
3. Brand & Customer Experience
- Uphold the KKR brand promise — Authentic, Hygienic, Homely South Indian Cuisine.
- Ensure average customer rating 4.4 and audit scores above 80% across outlets.
- Coordinate with marketing and PR teams for pan-India campaigns and digital branding.
4. Financial & Investor Relations
- Collaborate with promoters to attract 100 Cr in strategic investments for expansion.
- Prepare business reports, performance dashboards, and investor updates.
- Support valuations, feasibility studies, and funding presentations for new outlets.
5. Team Leadership & Training
- Build, lead, and mentor a high-performance cross-functional team of 100+ staff.
- Conduct training programs on KKR's service ethos, product knowledge, and operations.
- Develop performance-linked incentive plans aligned with revenue and profit goals.
Job Knowledge – Indian Cuisine Expertise
- Deep understanding of Indian, Coastal, and Regional Indian cuisines, including product sourcing, standardization, and flavor consistency.
- Hands-on knowledge of menu engineering, portion control, recipe costing, and production planning in large-scale kitchens.
- Familiarity with food safety standards (FSSAI), hygiene audits, and traditional cooking techniques adapted to modern kitchen operations.
- Experience in introducing regional Indian culinary themes across multi-city operations.
Qualifications & Experience
- Education:
- Bachelor's Degree in Hotel Management / Culinary Arts / Business Administration
- MBA or PG Diploma in Hospitality / Food Business Management (preferred)
- Experience:
- Minimum 10–15 years in F&B / QSR / Restaurant chain management
- Proven success in scaling multi-outlet brands (national or regional level)
- Strong background in South Indian cuisine operations preferred
- Experience in franchise development, brand growth, and central kitchen operations

Role Snapshot:
The General Manager will drive our national expansion through 60 FOCO (Company Owned) and 40 FOFO (Franchise Owned) outlets, spearhead operational excellence, and uphold our brand promise of delivering authentic South Indian cuisine with consistent quality and innovation.
Key Responsibilities:
Oversee Pan-India expansion and franchise development
Drive profitability (12–20% EBITDA) and cost control (Food 33–43%, Staff 15–20%)
Manage central kitchen, supply chain, and operational SOPs
Maintain audit and review scores (80% audits, 4.4 customer rating)
Collaborate with investors in scaling to 400 Cr and beyond
Who We're Looking For:
10–15 years in multi-outlet F&B / QSR / restaurant chain operations
Strong understanding of Indian cuisine — especially Indian food systems
Proven track record in franchise management and growth strategy
Leadership, financial acumen, and hands-on execution
Qualification:
