Role Overview:
The Sous Chef – Pizza is responsible for overseeing the entire pizza section, ensuring high standards of food quality, consistency, and presentation. This role involves supervising the kitchen team, managing daily operations, developing innovative pizza recipes, and maintaining hygiene and safety standards. The Sous Chef acts as the second-in-command in the pizza section and supports the Head Chef/Executive Chef in smooth kitchen operations.
Key Responsibilities:
- Supervise and manage daily operations of the pizza section.
- Prepare, cook, and present pizzas (wood-fired, stone-baked, thin crust, deep dish, etc.) to high standards.
- Train, guide, and motivate CDPs, DCDPs, and Commis in the pizza section.
- Develop and innovate new pizza recipes, sauces, and toppings in collaboration with the Head Chef.
- Monitor stock levels, order supplies, and control wastage to achieve food cost targets.
- Ensure dough preparation, proofing, baking, and topping consistency.
- Maintain high standards of hygiene, cleanliness, and food safety (HACCP compliance).
- Conduct regular quality checks to ensure consistency in taste and presentation.
- Support the Head Chef in menu planning, costing, and kitchen staff scheduling.
- Step in and lead the section during the absence of the Head Chef.
- Coordinate with service staff for smooth and timely order execution during busy operations.
Requirements:
- Proven experience as a Sous Chef or Senior CDP/DCDP in a pizza/Italian cuisine section.
- Strong knowledge of dough fermentation, pizza baking techniques, sauces, and toppings.
- Leadership skills with the ability to manage and train a team.
- Culinary degree/diploma or equivalent certification preferred.
- Strong organizational and time-management abilities.
- Ability to work in a high-pressure kitchen environment.
- Knowledge of HACCP and food safety standards.
Job Type: Full-time
Pay: ₹50, ₹70,000.00 per month
