  • Job Summary:
    The Commis II – Indian Curry Section is responsible for assisting in the preparation and cooking of a variety of Indian curry dishes under the guidance of senior chefs. This role requires basic knowledge of Indian cuisine, particularly curries, and the ability to work independently on assigned tasks. The Commis II also plays a key role in maintaining kitchen hygiene, preparing mise-en-place, and ensuring food consistency and quality.Key Responsibilities:
    • Prepare and cook a variety of Indian curry dishes, both vegetarian and non-vegetarian, following standard recipes.

    • Assist senior chefs in the development and preparation of menu items specific to Indian cuisine.

    • Prepare and portion curry bases, gravies, masalas, and accompaniments.

    • Ensure timely mise-en-place for daily service, including marination, chopping, grinding, and boiling.

    • Monitor cooking times, temperatures, and consistency of food to ensure quality and safety.

    • Maintain high standards of hygiene and cleanliness at your workstation and in the curry section.

    • Store and handle spices, herbs, and ingredients properly to maintain freshness and avoid wastage.

    • Follow HACCP and food safety standards strictly.

    • Assist in managing inventory and report any shortages or spoilage to the supervisor.

    • Support and guide junior team members (e.g., Commis III) when needed.
