Location: Madurai

Job Purpose:

To establish and manage an in-house microbiological laboratory to ensure food safety and quality

compliance across all production lines. The role will be responsible for microbial testing of raw

materials, in-process samples, finished products, and environmental monitoring to meet regulatory

and company standards..

Key Responsibilities & Accountability:

  • Assist in designing and establishing a microbiological laboratory.
  • Select and validate lab equipment, culture media, and test protocols.
  • Ensure compliance with FSSAI, ISO, GMP, and relevant quality standards.
  • Conduct routine microbiological tests such as TPC (Total Plate Count), Yeast & Mold, E.

coli, Coliforms, and Salmonella.

  • Test raw materials for microbial contamination.
  • Analyze in-process and finished products batch-wise, ensuring packaging begins only after

lab clearance.

  • Perform regular swab testing of production surfaces, equipment, and personnel.
  • Maintain detailed records for hygiene audits and regulatory inspections.
  • Maintain laboratory records, reports, and SOPs & prepare reports for internal quality

reviews and audits.

  • Ensure compliance with all relevant food safety regulations and standards.

Job Specification:

  • Experience: Minimum 5 years of experience in a food processing plant microbiology

laboratory.

  • Education: M.Sc. in Microbiology, Food Technology, or a related field.
  • Background: Strong knowledge of food microbiology, hygiene practices, and food safety

standards (FSSAI, Codex, ISO 22000, HACCP). Familiarity with ISO 17025 lab

accreditation is an advantage.

Maximum gross CTC up to 7 LPA .
