Role Description

This is a full-time on-site role for a Head of Department - Confectionery, located in West Delhi.
Dough & Cream
is looking for a
visionary and hands-on Head of Department – Confectionery
who can
create magic from scratch
and lead our confectionery division to new creative and operational heights.

in a fast-paced, quality-driven environment.

Key Responsibilities:

  • Lead and manage end-to-end confectionery operations across all categories – cakes, pastries, desserts, and modern plated sweets.
  • Drive innovation through R&D, new product launches, and seasonal menu creations.
  • Maintain world-class quality, taste consistency, and presentation standards.
  • Oversee production planning, hygiene, and food safety compliance in the base kitchen.
  • Train, mentor, and inspire the pastry & confectionery team to deliver excellence.
  • Collaborate closely with other HODs and the leadership team to align culinary creativity with business goals.
  • Source premium ingredients and manage vendor relations for quality and cost optimization.

What We're Looking For:

Minimum 10–15 years of experience in premium bakery brands or 5-star hotels (e.g.,
Taj, Oberoi, ITC, Marriott
)

Expertise in modern and classic confectionery techniques

Strong leadership, creativity, and attention to detail

Ability to work in a start-up environment — ready to
hustle, innovate, and execute

Excellent people management and communication skills
