Cluster Kitchen Head

to oversee kitchen operations across all Gracias Granny locations, ensuring consistent food quality, hygiene, prep practices, and team performance in line with brand standards. This role demands both hands-on food knowledge and the leadership to manage, train, and uplift a largely untrained team in a high-paced, casual dining environment. Responsibilities

:

Leadership & Professionalism

• Act as the central authority for all kitchen operations, setting a professional tone and ensuring teams respect and follow direction.
• Lead by example in punctuality, communication, and adherence to brand values.
• Maintain discipline in work ethic, hygiene, and teamwork across outlets.

Team Oversight, Training & Development

• Conduct hands-on training sessions for all BOH staff on prep efficiency, hygiene, food safety, and brand standards.
• Implement structured onboarding for new hires and periodic refresher training for existing staff.
• Mentor junior kitchen leaders to create a strong second line of command.

SOP Enforcement & Standardization

• Ensure strict adherence to all existing SOPs for recipes, plating, prep guides, portioning, and cleaning.
• Regularly review and update SOPs to improve efficiency and quality.
• Enforce a "no deviation" policy unless changes are approved and documented.

Quality Control & Audits

• Conduct unannounced inspections across all outlets to check taste, plating, freshness, and storage practices.
• Maintain an audit checklist and submit reports with corrective action plans.
• Follow up to ensure issues are resolved within set timelines.

Inventory, Wastage & Cost Control

• Work with outlet kitchen heads and storekeepers to ensure accurate ordering, proper storage, FIFO usage, and minimal wastage.
• Track kitchen costs and identify areas for savings without compromising quality.

Coordination with Central Kitchen

• Supervise dispatches, prep quantities, and cold chain integrity from the main kitchen to sub-kitchens.
• Ensure timely deliveries and clear communication on shortages, substitutions, or special requirements.

Vendor Quality Management

• Work with the procurement team to regularly evaluate raw material quality.
• Suggest alternatives or replacements when consistency or pricing issues arise.
• Build relationships with reliable suppliers to ensure continuity and standards.

Requirements

:

• 6–12 years of experience in casual/family dining chains (e.g., Chili's, Barbeque Nation, Social, Hoppipola, etc.)
• Has overseen multiple outlets or a large kitchen team
• Strong grounding in basic prep SOPs, hygiene, and cost controls
• Comfortable working with less formally trained staff and uplifting kitchen discipline
