**Position Summary**:
**Key Responsibilities**:
- **Menu Development**:
- Design and regularly update pure vegetarian menus with a balance of Indian
- Create special menus for festivals, events, and corporate functions.
- **Kitchen Operations Management**:
- Oversee daily kitchen operations ensuring efficiency, consistency, and service excellence.
- Plan food production schedules and manage workflow during high-demand periods like weddings and banquet function.
- **Food Quality and Presentation**:
- Maintain the highest standards of taste, quality, and presentation across all dishes.
- Ensure all food served meets the brand’s commitment to vegetarian purity and guest expectations.
- **Team Leadership and Staff Development**:
- Lead, mentor, and train chefs, cooks, and kitchen assistants.
- Conduct regular team meetings, skill development sessions, and performance reviews.
- **Hygiene and Safety Compliance**:
- Enforce strict adherence to food safety and sanitation guidelines (FSSAI standards).
- Conduct regular audits and ensure proper storage, handling, and waste management practices.
- **Cost Management**:
- Control food costs through menu engineering, portion control, and efficient inventory management.
- Work closely with the purchase department to source quality vegetarian ingredients at competitive prices.
- **Guest Interaction**:
- Personally interact with guests when required, especially during special functions, to receive feedback and customize offerings.
- **Coordination with Other Departments**:
- Collaborate with F&B service and hotel management for smooth event and dining operations.
- **Innovation and Trends**:
- Stay updated with culinary trends in vegetarian and wellness cuisines.
- Introduce creative concepts like farm-to-table, gluten-free offerings, organic buffets, and live kitchen counters.
**Requirements**:
- Degree/Diploma in Culinary Arts from a recognized institution.
- Minimum 8-10 years of progressive kitchen management experience, preferably in vegetarian or luxury hotel settings.
- Strong expertise in regional Indian vegetarian cuisine and global vegetarian cooking.
- Excellent leadership, communication, and organizational skills.
- Deep understanding of food hygiene regulations and best kitchen practices.
- Ability to manage high-volume kitchen operations and large events.
- Creativity, passion for food innovation, and commitment to sustainability and wellness trends.
