Key Responsibilities of a Commis 1 in a Chinese Kitchen:

- **Food Preparation**:

- Preparing ingredients for Chinese dishes such as chopping vegetables, slicing meats, and prepping seafood.
- Assisting with marinating meats and preparing sauces, broths, and stocks essential for dishes like stir-fries, soups, and dim sum.
- Understanding and handling various Chinese ingredients (e.g., soy sauce, ginger, garlic, Sichuan peppercorns, sesame oil).
- **Cooking Assistance**:

- Assisting with the cooking of dishes under the guidance of senior chefs, such as stir-frying, steaming, boiling, and deep-frying.
- Handling specialized cooking techniques used in Chinese cuisine, such as **wok cooking**, steaming in bamboo steamers, and using the proper amount of heat and oil.
- **Maintaining Hygiene and Cleanliness**:

- Ensuring that the workstations, tools, and utensils are cleaned and sanitized after use.
- Following strict hygiene standards to maintain cleanliness in the kitchen.
- **Assisting the Chef de Partie**:

- Supporting the Chef de Partie and senior chefs by preparing ingredients and ensuring that the cooking process runs smoothly.
- Helping to ensure timely service by organizing prep work and cooking in accordance with the restaurant’s pace.
- **Use of Equipment**:
