**Job Title**: Chinese Chef de Partie (CDP)
**Department**: Kitchen / Culinary
**Reports to**: Head Chef / Sous Chef
**Job Overview**:
The Chinese Chef de Partie (CDP) is responsible for preparing authentic Chinese cuisine, ensuring high standards in food preparation, presentation, and hygiene. This role requires expertise in Chinese cooking techniques, ingredient selection, and maintaining quality and consistency across all dishes served. The CDP will work under the guidance of the Head Chef and Sous Chef to deliver exceptional dining experiences.
**Key Responsibilities**:
- **Food Preparation and Cooking**:
- Prepare and cook a variety of Chinese dishes, including stir-fries, dim sum, soups, and regional specialties, adhering to traditional recipes and cooking methods.
- Ensure high quality, flavor, and consistency in each dish served.
- Develop and execute new dishes and specials in collaboration with the Head Chef.
- **Kitchen Operations and Management**:
- Supervise and support junior kitchen staff, guiding them in Chinese cooking techniques and presentation standards.
- Manage a specific section of the kitchen, ensuring all equipment and ingredients are organized and ready for service.
- Maintain cleanliness and orderliness in the kitchen, adhering to health and safety regulations.
- **Inventory and Stock Control**:
- Monitor stock levels of Chinese ingredients, sauces, and condiments, ensuring freshness and quality.
- Assist in ordering and maintaining inventory, tracking expiration dates, and reducing waste.
- **Quality Control and Standards**:
- Ensure that all dishes meet presentation, taste, and quality standards before they are served.
- Conduct regular quality checks and provide feedback to junior staff for continuous improvement.
- Follow established portion sizes, cooking methods, and garnishes for each dish on the menu.
- **Safety and Compliance**:
- Comply with all food safety, hygiene, and sanitation regulations, including HACCP and local health codes.
- Properly store and label ingredients and prepared food to maintain safety and freshness.
- Conduct regular cleaning and maintenance of kitchen equipment and report any repairs needed.
- **Collaboration and Menu Development**:
- Work closely with the Head Chef and Sous Chef to plan and refine the Chinese menu.
- Assist in designing seasonal and specialty menus that highlight traditional and modern Chinese flavors.
- Participate in team meetings, offering ideas for improvement and new dishes.
**Qualifications**:
- Diploma or certification in culinary arts, specializing in Chinese cuisine preferred.
- 3+ years of experience in Chinese kitchens, with at least 1 year in a CDP role.
- Expertise in various Chinese cooking techniques (e.g., wok cooking, dim sum, steaming).
- Familiarity with Chinese ingredients, spices, and flavor profiles.
**Skills**:
- Strong knowledge of traditional and modern Chinese cuisine
- Attention to detail and consistency in food preparation
- Ability to work under pressure in a fast-paced kitchen environment
- Excellent organizational and multitasking skills
- Strong teamwork and communication skills
