Job Description:
- **Tandoor Cooking**:
- Assist in preparing and cooking a variety of tandoori dishes such as naan, roti, paratha, kebabs, tikkas, and marinated meats.
- Operate and maintain the tandoor (clay oven), ensuring optimal temperatures for cooking.
- Monitor food during the cooking process to ensure quality and consistency, avoiding over or undercooking.
- **Preparation of Marinades & Ingredients**:
- Prepare marinades and spice blends for various tandoori dishes, ensuring authentic flavors and consistency.
- Handle the marination process for meats, seafood, and vegetables, following the chef’s instructions.
- Prepare dough for tandoori breads like naan and roti.
- **Food Safety & Hygiene**:
- Maintain a clean and organized workstation, ensuring adherence to food safety regulations and hygiene standards.
- Ensure proper storage and labeling of ingredients, especially marinated items, meats, and spices.
- Follow health and safety guidelines, including the proper use of tandoor equipment and personal protective gear.
- **Assisting Senior Chefs**:
- Assist the Tandoor Chef and other senior chefs in executing daily orders, preparing mise en place, and ensuring smooth kitchen operations.
- Learn and adapt to the kitchen’s workflow, working closely with senior team members.
- Contribute to the team by assisting in other sections of the kitchen when needed.
- **Quality Control**:
- Ensure the quality and consistency of tandoori items, paying close attention to seasoning, cooking times, and portion control.
- Regularly check the condition of the tandoor and other kitchen equipment, reporting any maintenance needs to the head chef or kitchen manager.
- **Inventory & Stock Management**:
- Monitor the stock of tandoor-related ingredients such as flour, spices, yogurt, meats, and vegetables.
- Assist in ordering supplies as required, ensuring that ingredients are fresh and available for daily service.
- Help reduce food waste by using ingredients efficiently.
- **Team Collaboration**:
- Work closely with other kitchen staff, including the kitchen porter, line cooks, and other commis chefs.
- Maintain good communication with front-of-house staff to ensure timely service of dishes.
- Participate in kitchen meetings and contribute ideas for improving the menu or kitchen processes.
**Skills & Qualifications**:
- **Experience**: Minimum 3-4 years of experience working with tandoor ovens or in a tandoor section of a kitchen. Prior experience in Indian cuisine is a plus.
- **Knowledge**: Familiarity with Indian spices, marinades, and traditional tandoori cooking techniques.
- **Cooking Skills**: Ability to handle and operate the tandoor with precision and care, ensuring food is cooked at the correct temperatures.
- **Attention to Detail**: Strong focus on maintaining quality, consistency, and presentation of tandoori dishes.
- **Physical Stamina**: Ability to work in a high-temperature environment near the tandoor and stand for extended periods of time.
- **Team Player**: Ability to work well with other chefs, commis, and kitchen staff in a collaborative and fast-paced environment.
- **Adaptability**: Willingness to learn and take direction from senior chefs and adapt to the kitchen’s workflow.
**Education & Certifications**:
- **Culinary Education**: A culinary diploma or training in Indian cuisine is preferred but not mandatory if there is sufficient on-the-job experience.
- **Health & Safety Certification**: Basic knowledge of kitchen hygiene practices and food safety regulations.
**Additional Requirements**:
- Ability to work flexible hours, including evenings, weekends, and holidays.
- Must be comfortable working in a hot environment and handling hot equipment.
