Job Responsibilities
- Prepare the menu as per the concept given by supervisor and provide inputs as and where needed. Make standard recipes and forward to supervisor for approval. Schedule and conduct food trials with subordinates.
- Receive orders, prepare food as per recipe and guide subordinates to do the same during meal services. Ensure proper garnish and accompaniments,
- Ensure adequate inventory and raw material supplies. Maintain a list of short supply/not supplied items and escalate to purchase department and immediate supervisor. Coordinate and procure bakery/banquet items for outlet needs.
- Check the ingredients and vegetables received from stores. Instruct subordinates to arrange items received according to prescribed standards (FIFO) and inspect the same.
- Interact with guests to understand the preferences and feedback; document guest feedback. Interact with guests to resolve minor complaints. Assist subordinates to meet the special needs of the guest. Document the feedback in the interaction report after the preferences are met. Forward the report to chef.
- Ensure order barking is done with each printed KOT and time of dishing out of a food order is noted and maintained according to the prescribed standard.
- Implement hygiene standards, update temperature logs, update the records of ISO 22000 (FSMS), check & ensure the objectives of ISO 14001 are followed & maintained, check storage equipment (refrigerators & dry store) maintenance with the help of subordinates, collect food samples & handover to supervisor in order to check with microbiologist.
- Make duty rosters and allocate responsibilities. Brief subordinates on hygiene standards and practices. Conduct regular inspections to monitor compliance and staff grooming.
- In addition to the above mentioned duties and job functions, any other assignment given by the management within the scope of job.
- Adherence to the Tata code of conduct, safety policies and values of the organization as defined.
