**Commis Chef - Japanese Cuisine**

Otoki Restaurant, Colaba, Mumbai

**Job Summary**:
**Key Responsibilities**:

- **Food Preparation**:

- Assist in the preparation of Japanese dishes such as sushi, sashimi, tempura, ramen, and other menu items under the guidance of senior chefs.
- Prepare ingredients by washing, cutting, marinating, and portioning according to recipes and standards.
- **Cooking and Plating**:

- Support cooking processes and ensure consistency in taste, texture, and presentation.
- Follow plating techniques and ensure dishes are presented beautifully before serving.
- **Hygiene and Safety**:

- Maintain cleanliness and organization of the workstation and kitchen equipment.
- Follow food safety and hygiene standards as per restaurant policies.
- Monitor and store ingredients properly to ensure freshness and quality.
- **Collaboration and Learning**:

- Work closely with senior chefs to learn and master Japanese cooking techniques.
- Assist in the development and testing of new dishes and menu items.
- Provide support during busy service hours to ensure smooth kitchen operations.
- **Inventory Management**:

- Assist in receiving, inspecting, and storing kitchen supplies and ingredients.
- Notify senior chefs about inventory levels and any shortages.

**Qualifications**:

- Prior experience as a Commis Chef or in a similar role, preferably in Japanese or Asian cuisine.
- Basic knowledge of Japanese cooking techniques and ingredients.
- Culinary certification or relevant training is preferred.
- Ability to work in a fast-paced kitchen environment.
