As a Commis 1-Asian, Thai and Nepali Cuisine, you will be part of our exciting, multi-unit, high-volume shipboard Culinary operation. You will perform culinary tasks in our state-of-the-art galleys, executing different types of Asian cuisine. - Conduct himself/herself in a courteous, friendly, and professional manner during his/her physical and verbal interactions with guests and fellow shipboard employees at all times, in accordance with company's philosophy
- Report to the assigned workstation on time, properly groomed and dressed according to company standards. This includes a clean uniform, name tag, chef’s hat, apron, hairnet for ladies, specified safety shoes, and appropriate personal protection equipment
- Prepare and cook (but not limited to) high-quality Chinese, Japanese, Korean, Thai, Vietnamese, and other types of Asian dishes, assisting the station head - usually the Chef de Partie Asia or Sous Chef - of your assigned workstation in executing high-volume food production on a daily basis
- Collaborate with the station head to review the meal and time requirements for the day’s service, taking part in ordering and cost controlling food requisitions to avoid overproduction and food wastage; study the menu to successfully estimate food and time requirements in a quick and efficient manner; follow Company recipes to produce consistent results
- Master the operation of all galley equipment according to the Company’s standard operating procedures; adjust thermostat controls to regulate temperature of refrigerators, ovens, broilers, grills, roasters, steam kettles, etc.; test equipment to ensure accuracy of temperature gauges, heating or cooling elements, etc.; report all malfunctions to the station head and request necessary repairs
- Maintain cleanliness of all utensils and equipment in your assigned section, taking care not to splash water inside the electrical components to prevent damage; carefully handle all equipment by placing them in the right storage areas and never allowing anything to drop onto the floor while moving them; clean and sanitize work areas including refrigerators, walk-in coolers, working counters, and portable food equipment; immediately reporting any equipment that is out of order or needs to be repaired to your supervisor
- Practice HACCP and onboard sanitation and hygiene standards at all times, in compliance with the ship’s international itinerary; acquire proficiency with regard to the onboard public health control plan to ensure that all food items, served and prepared, are safe for consumption; record food temperature in Blast Chiller log and prepare other required logs; learn about OPP and common practices/procedures to prevent outbreaks
- Work with assigned team members in the workstation and other employees in a cooperative, productive, and effective manner; provide new employees with a positive example and guidance on daily activities and familiarization of the workplace
- Perform related duties as required. This position description in no way states or implies that these are the only duties to be performed by the shipboard employee occupying this position. **Requirements**:
- Proof of cook apprenticeship completion or equivalent training
- Minimum of four to six years of cooking and food preparation experience in a four
- or five-star hotel, restaurant, or high-volume food service facility in China or in a venue focusing on Chinese/Asian cuisine
- Ability to demonstrate culinary fundamentals, including the use of a variety of knives; ability to follow detailed instructions and recipes
- Sound knowledge of food-handling procedures with regard to public health standards and kitchen cleanliness
- Knowledge of food ingredients used in classic international dishes
- Ability to identify and operate common kitchen equipment such as grinders, deep fryers, ovens, Bain Marie, mixers, etc.
- Ability to work positively and cooperatively in a diverse team environment; ability to communicate tactfully with department heads, co-workers, and other shipboard employees
- Completion of high school or basic education equivalency preferred
- Computer literacy is a plus
