Executive Chef Manager

We are seeking a highly skilled and experienced Executive Chef Manager to oversee all culinary operations and maintain the highest quality of food production.

The successful candidate will have a minimum of 5 years' experience in an upscale hotel, resort, cruise ship, or convention banqueting service, with at least 2 years as an Executive Chef Manager. A culinary school degree is also required.

Key responsibilities will include:

  • Directing and supervising direct reports, including Sous Chefs and other team members.
  • Maintaining excellent food knowledge and understanding culinary terms.
  • Reading, understanding, and preparing company recipes to maintain quality and consistency.
  • Completing tasks efficiently and productively, while working in any section of the kitchen.

Additional responsibilities will include coordinating and supervising team members, undertaking recipe reviews, and maintaining recipe folders. The successful candidate will also be responsible for follow-through on requests from supervisors or managers, controlling production levels, and recommending improvements.

Financially, this position requires cost containment through proper use, handling, and maintenance of records, reports, supplies, and equipment. You will identify potential expense reductions, analyze operational problems, establish controls, review timesheets, and prepare reports and letters utilizing personal computer systems and equipment.

Motivationally, as an Executive Chef Manager, you will monitor and manage workstation functions, assign duties and responsibilities, observe and evaluate staff and work procedures, and make recommendations regarding personnel actions. You will also inspect workstations, work areas, equipment, and ensure efficient service and conformance to standards.

To be successful in this role, you must possess strong management skills in a multicultural and dynamic environment, along with strong communication, problem-solving, decision-making, and interpersonal skills. Superior customer service, teamwork, and conflict resolution skills are also necessary.
