Food and Beverage Control Manager

The role of the Food and Beverage Control Manager is to oversee all aspects of cost control, inventory management, and financial analysis for the food and beverage operations.

This position requires close collaboration with the Executive Chef, Restaurant Manager, and purchasing team to ensure accurate costing, minimize waste, and support profitability while maintaining high standards expected of a premium fine dining establishment.


Key Responsibilities:

Cost Control & Analysis:
Monitor and control food and beverage costs through tracking purchases, inventory, and consumption. Analyze daily, weekly, and monthly reports to identify variances and recommend corrective actions. Implement systems and procedures for effective cost control and inventory optimization. Conduct regular recipe costing and menu engineering to assess profitability.

Inventory Management:
Oversee periodic inventory counts and reconcile variances. Maintain up-to-date and accurate inventory records. Ensure stock levels are appropriate for business volume, minimizing excess and shortages.

Purchasing Oversight:
Collaborate with procurement and kitchen teams to ensure quality and cost-effective purchasing. Verify supplier invoices and reconcile them with purchase orders and delivery receipts.

Reporting & Forecasting:
Prepare food and beverage cost reports for management review. Support budget preparation and assist in financial forecasting. Track KPI metrics including cost of goods sold (COGS), gross profit margins, and wastage rates.

Compliance & Standards:
Ensure compliance with health, safety, and hygiene regulations. Uphold the restaurant's premium quality standards in procurement and storage practices. Support internal and external audits related to F&B cost control. Qualifications & Skills:
  • Bachelor's degree in Finance, BCA, Hospitality Management, or related field.
  • Minimum 5-9 years of experience in food & beverage cost control, preferably in a fine dining hospitality environment.
  • Strong analytical and numerical skills.
  • Proficiency in inventory and cost control software (e.g., Posist systems, Navision systems and MM Module, procurement platforms like MarketMan, FMC, or equivalent).
  • Excellent communication and collaboration skills.
  • Detail-oriented with a high level of integrity and accountability.
