Executive Culinary Lead

About the Position:

As Executive Culinary Lead, you will be responsible for overseeing the culinary operations of our organization.

The primary focus is on maintaining an efficient operation by continuously assessing quality and cost of food production. This involves monitoring time management, providing ongoing training to staff, and ensuring adherence to established standards.

  • Ensure safe, quality food products and maintain guest satisfaction.
  • Work within a technical/specialized area of expertise to enhance the quality of service and product provided.
  • Display an accommodating and helpful attitude towards colleagues and guests.
  • Accept objectives set by others and work within agreed parameters to ensure tasks are completed.
  • Exercise fairness and impartiality in treating all crew members.
  • Conduct daily food tastings to monitor quality.
  • Address discrepancies (quality, taste, appearance) immediately.
  • Assist Section Heads in preparing daily electronic food requisitions based on forecasted figures.
  • Monitor and facilitate smooth and efficient dinner service, presentation, and final plating in assigned locations.
  • Ensure strict adherence to Public Health regulations at all times.

Qualifications--

  • Advanced culinary skills, leadership abilities, and experience.
  • Minimum 8 years of experience in the profession, with a focus on quality hotels and restaurants.
  • Minimum 2 years of experience in a management role in a well-recognized luxury hospitality establishment or upscale cruise line.
  • Fluent written and spoken English language proficiency.
  • Able to lead and make informed decisions.
  • Good administrative skills.
  • Experience in coaching and mentoring subordinates.
