Job Title: Master Pastry Specialist

Key Responsibilities
  • Lead the preparation of daily bakery production, ensuring smooth and efficient operations.
  • Manage bread assortment quality, presentation, and production to meet company standards.
  • Collaborate with the Head Baker to develop production forecasts and record leftovers to minimize waste.
  • Assist in setting up the bread display in various buffets.
  • Maintain knowledge of United States Public Health rules and regulations.
  • Ensure the cleanliness of the bakery shop according to the Executive Chef's schedule.
  • Prepare the bakery for USPH inspections.
  • Procure necessary items from main stores to the bakery shop when assigned.
  • Evaluate recipes and yields against company standards.
  • Support the CDP Baker in completing the daily consumption recap as required by the Executive Chef.
Financial Management
  • Manage expenses and revenue targets within allocated budgets.
  • Maintain records, reports, supplies, and equipment efficiently.
Motivational Leadership
  • Develop and implement strategies to optimize team performance.
  • Monitor workstation functions, assign duties, and evaluate staff procedures to ensure quality and service standards.
  • Mentor staff to strengthen their performance and prepare them for future advancement opportunities.
Qualifications and Education
  • A minimum of three years' experience as a baker in an upscale hotel, resort, or convention banqueting service.
  • Knowledge of cleaning techniques, equipment usage, and safety protocols.
  • High school diploma or basic education equivalency required.
