**Kitchen Specialist Role Overview:**

This role is responsible for preparing a variety of dishes in a professional kitchen environment. The ideal candidate will have strong culinary skills and the ability to work efficiently under pressure.

Key Responsibilities:

  • Prepare all basic food items as per menu requests from supervisors, adhering to company standards and expectations.
  • Develop advanced knife handling skills through hands-on training and practice.
  • Work effectively in any kitchen section, demonstrating teamwork and collaboration skills.
  • Demonstrate knowledge of culinary terms and principles, applying them to daily tasks and responsibilities.
  • Read, understand, and follow recipes accurately, ensuring consistency and quality in food preparation.
  • Effect tasks efficiently and maintain high productivity, meeting deadlines and achieving goals.
  • Adhere to Public Health regulations within your designated area, maintaining a clean and safe working environment.
  • Prepare assigned areas for announced or unannounced health inspections, demonstrating attention to detail and compliance with regulations.
  • Arrive on time, follow supervisor instructions, and maintain personal appearance, uniform, and hygiene according to company rules.

Required Skills and Qualifications:

  • A minimum of 4 years experience in upscale hotel, resort, cruise ship, or convention banqueting service, with at least 2 years as a Kitchen Specialist (shipboard experience preferred).
  • Culinary school degree required, with a focus on classical cooking techniques and kitchen management.
  • Strong management skills in multicultural environments, with the ability to lead and motivate teams.
  • Excellent communication, problem-solving, decision-making, and people skills, with the ability to work effectively with colleagues and supervisors.
  • Superior customer service, teambuilding, and conflict resolution abilities, with a focus on delivering exceptional results.
  • Knowledge of personalized service principles, including needs assessment techniques, quality standards, alternative delivery systems, and guest satisfaction evaluation techniques.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills, with the ability to prioritize tasks and meet deadlines.
  • Intermediate computer software skills necessary, with proficiency in kitchen management systems and other relevant software.
  • Understanding of basic accounting principles such as numbering flow, debits/credits, adjusting entries, and corrections.
  • Ability to write reports and business correspondence, establishing a good rapport with Senior Officers and corporate office staff.

In addition to stated hiring requirements, internal candidates must meet the following criteria:

  • Completion of at least one contract as a Commis Cook with satisfactory performance rating and demonstrated leadership skills.
