About the Role:
The Sous Chef plays a crucial part in maintaining an efficient kitchen operation by consistently evaluating food quality and production costs.
Key Responsibilities:
- Maintain operational efficiency while adhering to set standards.
- Provide ongoing training to ensure corporate office standards are met.
- Ensure safe, high-quality food products and exceptional guest satisfaction.
- Develop and implement systems, procedures, and objectives as set by the organization.
- Improve service and product quality within a specialized area of expertise.
- Exhibit an accommodating and helpful demeanor.
- Accept objectives set by others and work within agreed parameters.
- Mentor and support subordinates to boost morale and personal esteem.
- Foster a positive team atmosphere, treating all crew members fairly and with respect.
- Adhere to menus, recipes, methods, and operational specifics provided by the company.
- Seek guidance from others when appropriate.
- Achieve set goals efficiently and effectively.
- Conduct daily food tastings to ensure quality.
- Correct discrepancies promptly.
- Monitor and assist Section Heads in preparing electronic food requisitions based on forecasted figures.
- Oversee the Dinner Service Line to ensure smooth and efficient service.
- Use the Culinary Checklist to monitor production levels.
- Maintain compliance with Public Health regulations at all times.
Requirements:
- Advanced culinary skills, leadership experience, and a strong track record.
- A minimum of 8 years' experience in the profession (Quality Hotels and Restaurants).
- A minimum of 2 years of management experience in a well-recognized luxury hospitality establishment or upscale cruise line.
- Fluent written and spoken English communication skills.
- Effective communication with senior management.
- Able to lead and make informed decisions.
- Strong administrative skills.
- Proven coaching abilities.
- A focus on cost-effectiveness and quality awareness.
- Ability to adapt to scheduled work hours while being flexible when needed.
- Experience working with international team members.
- Ability to perform duties under pressure.
Preferred Qualifications:
- Cruise Ship or 5-star Hotel Experience.
- Proficiency in additional languages.
