As a Senior Kitchen Leader, you will be responsible for overseeing the daily operations of a high-volume kitchen. Your primary focus will be on maintaining the highest standards of food quality and safety while ensuring efficient service delivery.
Key Responsibilities:
- Directs, coaches, supports, supervises, and evaluates all direct reports to ensure seamless team performance.
- Monitors and maintains exceptional food knowledge and understanding of culinary terms to drive menu development and execution.
- Ensures that all recipes are prepared with precision, adhering to corporate guidelines for taste and quality.
- Coordinates and supervises all team members assigned to their section, assigning tasks efficiently and effectively.
- Responsible for daily recipe reviews and maintaining accurate recipe folders.
- Follows up on any requests from supervisors or managers, including show plates, food samples, and random tastings.
- Manages production levels and recommends improvements to enhance efficiency and reduce costs.
- Prepares electronic food requisitions for sections and verifies deliveries for accuracy, reporting discrepancies to immediate supervisors.
- Oversees main kitchen sections, including sauce, entremetier, fish, roast, outlet CDP, tournant, and cold kitchen, ensuring smooth food production.
- Maintains adherence to public health standards, following local regulations and company expectations.
- Ensures accurate HACCP program implementation and conducts regular workstation spot checks.
- Reports for duty at assigned times, adhering to supervisor instructions and personal appearance, uniform, and hygiene standards.
As a Senior Kitchen Leader, you will also be responsible for managing financial aspects of your department.
Key Financial Responsibilities:
- Identifies potential cost reductions through effective use of resources, handling, and maintenance of records, reports, supplies, and equipment.
- Analyzes operational problems and establishes controls to minimize waste and optimize efficiency.
- Reviews and forwards timesheets to the Executive Chef for approval.
- May prepare various reports and letters using computer systems and equipment.
- Ensures accurate item requisitioning, within acceptable timeframes, and in accordance with established control procedures.
As a Senior Kitchen Leader, you will play a crucial role in motivating and developing your team.
Key Motivational Responsibilities:
- Monitors and manages workstation functions, observing staff performance and work procedures to ensure quality standards and service excellence.
- Assigns duties and responsibilities to team members, making recommendations regarding personnel actions.
- Inspects workstations, work areas, equipment, and other facilities to ensure efficient service and conformance to standards.
To succeed as a Senior Kitchen Leader, you will need a solid foundation in culinary arts and management.
Required Qualifications and Education:
- A minimum of 8 years of experience in an upscale hotel, resort, cruise ship, or convention banqueting service, with at least 2 years as a Chef de Partie (shipboard experience preferred).
- Culinary school degree is required.
- Strong management skills, excellent communication, problem-solving, decision-making, and interpersonal skills.
