Senior Culinary Professional

The successful candidate will be responsible for overseeing the daily culinary operations within a fast-paced kitchen environment.

  • Manages and directs all direct reports, providing coaching, support, and evaluations to ensure exceptional performance.
  • Ensures that all team members possess a deep understanding of food knowledge and culinary terminology.
  • Prepares high-quality company recipes while maintaining consistency in taste according to corporate guidelines.
  • Works efficiently, completing tasks as required, and coordinates team activities with precision.
  • Coordinates and supervises team members, assigning and delegating tasks accordingly.
  • Conducts regular recipe reviews, maintaining accurate and up-to-date folders.
  • Executes requests from direct supervisors or managers, including show plates, food samples, and random tastings.
  • Monitors production levels, recommending improvements and cost-saving strategies.
  • Responsible for electronic food requisitions, verifying deliveries for accuracy, and reporting discrepancies.
  • Oversees main kitchen sections and entire food production process.
  • Maintains Public Health standards and expectations within their section.
  • Ensures the HACCP program is implemented correctly.
  • Prepares assigned areas for inspections.
Financial Responsibilities
  • Responsible for managing costs through proper use, handling, and maintenance of records, reports, supplies, and equipment.
  • Identifies potential expense reductions through effective cost control.
  • Analyzes operational problems and implements corrective measures.
  • Reviews timesheets and forwards them to the Executive Chef for approval.
  • Prepares various reports and letters using personal computer systems and equipment.
  • Ensures items are requisitioned in correct quantities, within acceptable timeframes, and in accordance with established procedures.
Motivational Responsibilities
  • Monitors workstation functions and assigns duties and responsibilities to staff.
  • Evaluates staff and work procedures to ensure quality standards and service are met.
  • Makes recommendations regarding personnel actions such as new hire requests and discharges.
  • Inspects workstations, work areas, equipment, etc., to ensure efficient service and conformance to standards.
