As a Senior Culinary Manager, you will oversee the entire food production process in our kitchen. Your key responsibilities include directing and evaluating your direct reports, maintaining quality and consistency in taste according to corporate office instructions, and ensuring that all tasks are completed efficiently and productively.

Key Responsibilities:

  • Directs, coaches, and evaluates all direct reports.
  • Maintains quality and consistency in taste according to corporate office instructions.
  • Ensures that all tasks are completed efficiently and productively.
  • Coordinates and supervises team members assigned to their section.
  • Undertakes daily recipe reviews and maintains recipe folders in immaculate condition.
  • Follows through on requests within the area of responsibility received from the direct supervisor or manager on duty.
  • Controls production levels and recommends ideas for improvements and better cost controlling.
  • Prepares daily electronic food requisitions needed for section production and counterchecks deliveries for accuracy.
  • Oversees main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and entire food production.
  • Maintains Public Health standards and expectations within their section.
  • Ensures HACCP program is carried out correctly.
  • Prepares assigned areas for announced or unannounced inspections.
  • Reports for duty at assigned times and follows supervisor's instructions.

Qualifications and Education:

  • Requires 5 years' experience in an upscale hotel, resort, cruise ship, or convention banqueting service with 2 years as Chef Tournant.
  • A culinary school degree is required.
  • Has strong management skills in a multicultural environment.
  • Strong communication, problem-solving, decision-making, and interpersonal skills.
  • Superior customer service, teamwork, and conflict resolution skills.
  • Knowledge of personalized services including needs assessment techniques, quality service standards, alternative delivery systems, and guest satisfaction evaluation techniques.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
  • Intermediate computer software skills required.
  • Possesses a good understanding of basic accounting principles.
  • Ability to write reports and business correspondence and establish a good rapport with Senior Officers and the corporate office.
