Meat Production Manager

We are seeking an experienced Meat Production Manager to oversee the smooth operation of our Butcher Shop and production on a day-to-day basis.

Job Summary:

The successful candidate will be responsible for ensuring that all tasks are completed to the highest standard, maintaining a thorough knowledge of food safety regulations and protocols, and mentoring staff to strengthen their performance.

Responsibilities:

  • Direct and supervise the Butcher Shop team to ensure efficient task completion.
  • Responsible for the thawing, butchering, and preparation of all meat and poultry for daily menus.
  • Maintain thorough knowledge of United States Public Health Rules and Regulations and ensure compliance at all times.
  • Conduct workstation spot checks to minimize deterioration and waste.

Requirements:

  • Minimum two years' experience as a Head Butcher in an upscale hotel, resort, or cruise ship environment.
  • Culinary school degree required.
  • Strong management skills in a multicultural and dynamic environment.
  • Excellent communication, problem-solving, decision-making, and interpersonal skills.
