Job Overview

As a seasoned butcher, you will oversee the day-to-day operations of our butcher shop and production team.

Key Responsibilities:

  • Supervise and direct all butchers in the shop.
  • Manage meat thawing, cutting, and preparation for daily menus.
  • Ensure adherence to public health regulations and standards.
  • Oversee cleaning and maintenance of the butcher shop and thawing rooms.
  • Prepare the shop for inspections.
  • Coordinate storage and transportation of meats and poultry.
  • Monitor product yields and portions.
  • Compile daily butcher reports and assist with inventory management.
  • Enforce punctuality and uniform requirements among staff.
  • Participate in standby during inspections.

Leadership and Management:

  • Direct and supervise butchers to ensure efficient workflow.
  • Develop and implement effective systems for managing butchering processes.
  • Recruit, train, and evaluate butchering staff.
  • Conduct regular equipment inspections to ensure optimal performance.
  • Collaborate with other departments to optimize production and minimize waste.

Qualifications and Requirements:

  • Bachelor's degree in culinary arts or related field.
  • Minimum two years' experience as a senior butcher in an upscale environment.
  • Strong leadership, communication, problem-solving, and interpersonal skills.
  • Excellent customer service, teambuilding, and conflict resolution skills.
  • Proficient in basic accounting principles and computer software applications.
