Job Summary

This position oversees daily operations in a butcher shop, ensuring smooth and efficient production.

Key Responsibilities:
  • Shop Management
    • Implement effective day-to-day management of the butcher shop to maintain high standards.
    • Maintain thorough knowledge of company policies and ensure strict adherence.
  • Team Supervision
    • Direct, coach, support, supervise, and evaluate direct reports effectively.
    • Assist in the hiring and training of new staff members to enhance team performance.
  • Meat Preparation
    • Oversee thawing, butchering, and preparation of all meat and poultry used in daily menus.
    • Ensure product yields and portions comply with established guidelines.
  • Cleaning and Maintenance
    • Ensure thorough cleaning of the butcher shop and thawing rooms according to schedule.
    • Promote proper equipment maintenance to minimize damage.
  • Compliance and Quality Control
    • Prepare the butcher shop and thawing rooms for inspections by ensuring readiness.
    • Strive for USPH compliance and adhere to established rules and regulations.
  • Inventory Management
    • Responsibilities include storing received meats and poultry into freezers on designated days.
    • Requisition and transport necessary items from freezers to thawing rooms as per thawing schedule.
  • Reporting and Administration
    • Complete Daily Butcher Recaps as required.
    • Assist in taking inventory of all meat and poultry storage rooms.
  • Staff Development
    • Provide mentorship, develop, and offer on-the-job training to staff members.
    • Strengthen current performance and prepare staff for future growth opportunities.
