Responsibilities:

  • Maintain time management and oversee budget control.
  • Provide ongoing training and adhere to operational protocols.
  • Ensure safe and quality food products and prioritize guest satisfaction.
  • Develop systems and procedures to enhance service and product quality.
  • Work within a technical area to improve service and product quality.
  • Avoid conflicts and maintain a helpful demeanor.
  • Accept objectives set by others and work within agreed parameters.
  • Mentor subordinates to boost morale and personal esteem.
  • Ensure fair treatment of crew members and maintain a positive team atmosphere.
  • Follow menus, recipes, and operational specifics provided by the organization.
  • Seek direction from others when appropriate.
  • Conduct daily food tastings and address discrepancies promptly.
  • Monitor and assist Section Heads with electronic food requisitions.
  • Ensure smooth and efficient dinner service presentation and plating.
  • Monitor production and preparation levels using the Culinary Checklist.
  • Comply with Public Health regulations at all times.

Qualifications:

  • Advanced culinary expertise, leadership skills, and significant experience.
  • Minimum 8 years in the profession (Quality Hotels and Restaurants).
  • Minimum 2 years of experience in a management role in a luxury hospitality establishment or upscale cruise line.
  • Fluent written and spoken English communication.
  • Effective senior management communication.
  • Possess ability to lead and make decisions.
  • Good administrative skills.
  • Experienced in coaching subordinates.
  • Cost and quality conscious.
  • Flexible scheduled work hours.
  • International team collaboration.
  • Perform assigned duties under pressure.
