Job Title: Culinary Team Leader

Overview:

We are seeking a highly skilled and experienced Culinary Team Leader to join our team. As a key member of the kitchen, you will be responsible for leading a team of chefs and cooks to deliver exceptional food quality and service.

Key Responsibilities:

  • Direct, coach, support, supervise, and evaluate all direct reports.
  • Maintain excellent food knowledge and a full understanding of culinary terms.
  • Read, understand, follow, and prepare company recipes by maintaining the quality and consistency in taste according to instructions.
  • Work efficiently and productively, completing tasks as required.
  • Coordinate and supervise team members assigned to sections, assigning and delegating tasks accordingly.
  • Undertake daily recipe reviews, maintaining recipe folders in immaculate condition.
  • Responsible for follow-through on requests within areas of responsibility received from direct supervisors or managers on duty.
  • Control production levels and recommend improvements and cost-controlling ideas.
  • Prepare electronic food requisitions needed for section production and countercheck deliveries for accuracy, reporting discrepancies to immediate supervisors.
  • Oversee main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and their entire food production.
  • Maintain and ensure Public Health standards are followed according to company expectations (US, Anvisa, Shipsan, Canadian, Australian, etc.).
  • Ensure HACCP programs are carried out correctly.
  • Prepare assigned areas for announced or unannounced United States Public Health type inspections.
  • Report for duty at assigned times, follow supervisor's instructions, and maintain personal appearance, uniform, and hygiene according to company rules and regulations.
  • Identify potential expense reductions through cost control.
  • Analyze operational problems and establish controls.
  • Review timesheets and forward them to Executive Chef for approval.
  • Prepare various reports and letters utilizing personal computer systems and equipment.
  • Ensure items are requisitioned in correct quantities, within acceptable timeframes, and in accordance with established control procedures.
  • Conduct workstation spot checks to ensure items are correctly stored to minimize deterioration and waste.

Motivational Responsibilities:

Monitor and manage assigned workstation functions.

Monitor assignment of duties and responsibilities to staff.

Observe and evaluate staff and work procedures to ensure quality standards and service are met.

Make recommendations regarding personnel actions such as new hire requests and discharges to ensure adequate and continuous staffing.

Inspect workstations, work areas, equipment, etc., to ensure efficient service and conformance to standards.
