Senior Executive Chef

Our team seeks a highly skilled and experienced Senior Executive Chef to join our culinary leadership. This key member will direct, coach, and supervise direct reports ensuring seamless food production and exceptional customer service.

Responsibilities:
  • Directs and evaluates all direct reports with the Sous Chef
  • Coordinates and supervises team members assigned to their section, delegating tasks accordingly
  • Undertakes daily recipe reviews, maintaining immaculate recipe folders
  • Ensures follow-through on requests within the area of responsibility received from the direct supervisor or manager on duty
  • Manages production levels and recommends improvements for better cost control
  • Maintains compliance with Public Health regulations according to company standards and expectation
  • Ensures correct implementation of the HACCP program
  • Prepares areas for announced or unannounced inspections
Financial Management:
  • Responsible for cost containment through proper use and handling of records, reports, supplies, and equipment
  • Identifies potential expense reductions through cost control
  • Analyzes operational problems and establishes controls
  • Reviews timesheets and forwards them to the Executive Chef for approval
  • Prepares various reports and letters utilizing personal computer systems and equipment
Leadership Responsibilities:
  • Monitors workstation functions and manages assigned duties and responsibilities
  • Observes and evaluates staff and work procedures to ensure quality standards and service are met
  • Makes recommendations regarding personnel actions such as new hire requests and discharges to ensure adequate and continuous staffing
Qualifications and Education:
  • A minimum of 5 years in an upscale hotel, resort, cruise ship, or convention banqueting service and at least 2 years as a Senior Executive Chef (shipboard experience preferred)
  • Culinary school degree required
  • Strong management skills in a multicultural and dynamic environment
  • Strong communication, problem-solving, decision-making, and interpersonal skills
