
Senior Food Production Manager

The Senior Hospitality Manager is responsible for overseeing the production and presentation of food items to meet customer expectations while maintaining high standards of safety and hygiene.
This role requires strong business acumen, a commitment to quality, and excellent financial and budgeting skills.
- Ensure that all safety and hygiene policies are strictly followed at the site.
- Control the quantity and quality of ingredients, ensuring all items are received as per specifications and training receiving area staff on ingredient quality.
- Maintain records of all hygiene-related procedures, initiatives, and incidents.
- Coordinate with QMHSE and H&FS teams to implement policies and processes.
- Report all incidents pertaining to QMHSE and H&FS to concerned teams in a timely manner.
- Operational ownership of all QMHSE and H&FS processes.
- Timely communication of all possible on-site hazards to concerned departments.
- Food Operations
- Ensure service deliveries are carried out as per terms and conditions agreed upon with clients.
- Manage menu recipes rotation for breakfast, lunch, snacks, dinner, and special events.
- Initiate development of new menus, upgrade old menus, and special event menus.
- Taste food before service begins.
- Develop new ideas for promotions, festivals, and other special events.
- Plan pre-preparation areas to ensure items are processed according to recipes.
- Consistently maintain standards of quality, cost, presentation, and flavor of foods.
- Organic Growth and Profitability
- Ensure organic growth of sales and sites by developing and promoting service excellence, retail offers, and value-added offers.
- Sustain and build site profitability through timely analysis of reports and provide solutions to counter discrepancies.
- Cash and Debtors Management
- Accurately control, handover, and deposit cash; maintain accurately all specified cash control documents.
- Ensure all invoices are raised and delivered to clients as per schedule.
- People Management and Training
- Manage on-site team including cooks, MPWs, stewards, cashiers, stores assistants, etc.
- Ensure all HR processes and staff welfare activities are implemented and carried out.
- Communication and Client Retention
- Stay in close communication with clients regarding services, additional business, new initiatives, and hygiene, preparing documents accordingly.
- Ensure 100% client retention.
- Wastage Control and Cost Management
- Record daily leftovers and plan production based on this data.
- Minimise wastage and recycle excess ingredients for other dishes in accordance with highest hygiene standards.
- Legal Compliances
- Coordinate with HR, QMHSE, and Legal departments to ensure all legal compliances are met and a copy is maintained.
- Systems Implementation and Process Management
- Ensure all systems and processes are implemented and followed as per company policy.
- Document and display all work processes.
- Procurement and Inventory Management
- Monitor daily raw material indent.
- Should be IHM pass out with 10 years of work experience.
- Strong business acumen.
- Commitment to quality.
- Strong financial and budgeting skills.
- Sound written and verbal communication.
- Well-groomed and able to represent Sodexo in a professional manner.
- Strong interpersonal skills and very customer-focused.
