About the Role:
The primary objective of this position is to oversee a seamless operation by continually evaluating food production quality and cost.
Responsibilities:
- Ensure efficient time management and monitor expenses.
- Provide ongoing coaching and training, ensuring adherence to corporate standards.
- Maintain high-quality, safe food products and prioritize guest satisfaction.
- Develop and enforce organizational systems, procedures, rules, objectives, and timelines, adopting a disciplined approach when performing tasks.
- Contribute to enhancing service and product quality within a specialized area of expertise.
- Exhibit an accommodating and helpful demeanor.
- Accept set objectives from others and work within established parameters to ensure task completion.
- Mentor, counsel, coach, and support subordinates to boost morale and personal esteem.
- Maintain a positive crew atmosphere within the administration department, ensuring fair and unbiased treatment of all crew members.
- Adhere strictly to menus, recipes, methods, and operational specifics provided by the organization.
- Seek direction and authority from others when appropriate.
- Achieve set goals in a non-assertive and efficient manner.
- Conduct daily food tastings.
- Address discrepancies (quality, taste, appearance) immediately.
- Assist Section Heads in preparing electronic food requisitions according to forecasted figures.
- Monitor the Dinner Service Line in assigned locations to ensure smooth and efficient service, presentation, and final plating.
- Utilize the Culinary Checklist to monitor production and preparation levels.
- Ensure compliance with Public Health regulations at all times on board.Qualifications and Required Skills:
Required Qualifications:
- Advanced culinary skills, leadership experience, and proficiency.
- Minimum 8 years of professional experience in quality hotels and restaurants.
- At least 2 years of experience in a management role within a well-established luxury hospitality establishment or upscale cruise line.
- Fluent written and spoken English communication.
- Ability to effectively communicate with senior management.
- Possess the ability to lead and make informed decisions.
- Strong administrative skills.
- Experience in coaching subordinates.
- Cost and quality consciousness.
- Flexibility with scheduled work hours, with adaptability when circumstances demand it.
- Collaboration with international team members.
- Capability to perform assigned duties under pressure.
Preferred Skills:
- Cruise ship or 5-star hotel experience.
- Additional language fluency.
