Key Responsibilities:
  • Directs, coaches, supports, supervises, and evaluates all direct reports with the Sous Chef.
  • Maintains excellent food knowledge and a full understanding of culinary terms.
  • Prepares company recipes while maintaining quality and consistency in taste according to corporate instructions.
  • Completes tasks efficiently and productively.
  • Coordinates and supervises team members assigned to their section.
  • Undertakes recipe reviews daily and maintains recipe folders in immaculate condition.
  • Follows through on requests within their area of responsibility from direct supervisors or managers on duty.
  • Controls production levels and recommends improvements for better cost control.
  • Prepares electronic food requisitions needed for section production and counterchecks deliveries for accuracy.
  • Oversees any main section of the kitchen, including Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen.
  • Maintains Public Health standards according to company expectations and ensures HACCP program execution.
  • Prepares areas for inspections and reports to duty at assigned times.
Financial Responsibilities:
  • This position is responsible for cost containment through proper use and maintenance of records, supplies, and equipment.
  • Identifies potential expense reductions through cost control.
  • Analyzes operational problems and establishes controls.
  • Reviews timesheets and forwards them to the Executive Chef for approval.
  • Prepares various reports and letters using personal computer systems and equipment.
  • Ensures items are requisitioned in correct quantities and within acceptable timeframes.
Motivational Responsibilities:
  • Monitors and manages workstation functions.
  • Assigns duties and responsibilities to staff.
  • Evaluates staff and work procedures to ensure quality standards and service are met.
  • Makes recommendations regarding personnel actions such as new hires and discharges.

The ideal candidate will have strong leadership skills, be able to maintain high standards of quality, and have excellent communication skills. They will also be able to motivate staff to achieve goals and improve performance.
