Job Summary

As a seasoned Head Meat Cutter, you will oversee the smooth operation of the Butcher Shop, ensuring efficient production and control in accordance with company policies.

  • Directs, coaches, supports, supervises, and evaluates all direct reports to ensure exceptional performance and quality standards.\
  • Responsible for thawing, cutting, and preparing all meat and poultry used in daily menus, maintaining a comprehensive knowledge of US Public Health Rules and Regulations.\
  • Ensures cleaning of the Butcher Shop and thawing rooms according to schedule, minimizing equipment damage and promoting a safe working environment.\
  • Prepares workstations, work areas, equipment, and ensures efficient service and conformance to standards.\
  • Mentors, develops, and provides on-the-job training to staff members to strengthen their current performance and prepare them for future advancement.\
  • Conducts workstation spot checks to ensure items are correctly stored, minimizing deterioration and waste.\
  • Reviews timesheets and forwards them to the Sous Chef for approval, analyzing operational problems and establishing controls.\
  • May prepare various reports and letters utilizing personal computer systems and equipment, requisitioning items in correct quantities within acceptable timeframes and adhering to established control procedures.\
  • Monitors and manages assigned workstation functions, observing and evaluating staff and work procedures to ensure quality standards and service are met.\
  • Assists the Inventory Manager with taking inventory of all meat and poultry storage rooms as required by the Food & Beverage Director.\
  • Performs related duties as required.\
