Key Responsibilities:

This role is a key member of the culinary team, responsible for overseeing daily kitchen operations and ensuring seamless food production.

Main Duties:

  • Directs and evaluates direct reports with guidance from the Sous Chef
  • Maintains high standards of food quality and consistency in taste according to industry best practices
  • Coordinates and supervises team members assigned to their section, assigning tasks accordingly
  • Undertakes recipe reviews daily, maintaining folders in immaculate condition
  • Ensures follow-through on requests from supervisors or managers, including show plates and food tastings
  • Manages production levels, recommending improvements and better cost control
  • Prepares electronic requisitions needed for section production, counterchecking deliveries for accuracy
  • Ensures compliance with Public Health standards and expectations, referring to international guidelines
  • Maintains HACCP program implementation
  • Reports for duty at assigned times, adhering to organizational rules and regulations

Financial Responsibilities:

  • Achieves costs through proper use of records, supplies, and equipment
  • Identifies potential expense reductions through strategic cost control
  • Analyzes operational problems, establishing controls
  • Reviews timesheets and forwards them to the Executive Chef for approval
  • Prepares various reports and letters using personal computer systems
  • Conducts workstation spot checks to minimize deterioration and waste

Motivational Responsibilities:

  • Monitors assigned workstation functions
  • Assigns duties and responsibilities to staff
  • Evaluates staff and work procedures to ensure quality standards and service
  • Makes recommendations regarding personnel actions
  • Inspects workstations, areas, equipment, etc. to ensure efficient service and conformance to standards
