Pastry Chef Tournant

We seek a skilled and motivated Pastry Chef Tournant to deliver exceptional culinary expertise in our dynamic kitchen environment.

In this role, you will oversee daily operations, mentor junior staff members, and ensure that every dish meets the highest standards of quality and consistency.

  • Ensure seamless operation and control of the pastry shop and production processes daily.
  • Responsible for producing, maintaining quality, and presenting a variety of pastry and dessert items in daily menus.
  • Assist in preparing production forecasts and recording leftovers to minimize waste.
  • Arrange attractive pastry displays in various buffets.
  • Ensure compliance with United States Public Health regulations.
  • Clean the pastry shop according to schedule and exercise proper methods to prevent equipment damage.
  • Prepare the pastry galley for USPH inspections.
  • Requisition necessary items from main stores to the pastry shop when assigned.
  • Ensure recipes and yields meet company standards.
  • Assist with completing daily pastry consumption recaps.
  • Attend required meetings, training activities, and courses.

Requirements:

  • Minimum three years' experience as a Pastry Cook in an upscale hotel or cruise ship setting.
  • Knowledge of cleaning techniques, requirements, and equipment usage.
  • High school diploma or basic education equivalency requirement.
