Job Title: Meat Department Lead

The ideal candidate will be responsible for leading the Meat Department to achieve operational excellence in a fast-paced environment.

  • Oversee daily menus preparation and ensure smooth operation of the department.
  • Direct and support direct reports, providing guidance on task prioritization and time management.
  • Prepare all meat and poultry for daily menus, maintaining quality standards.
  • Maintain knowledge of food safety regulations and ensure compliance with company policies.
  • Clean the Meat Department and thawing rooms according to schedule to prevent equipment damage.
  • Prepare the Meat Department and thawing rooms for inspections.
  • Store received meats and poultry into freezers on loading days.
  • Requisition and transport necessary items from freezers to thawing rooms as per the Executive Chef's schedule.
  • Ensure product yields and portions meet standards outlined in the Meat Department Manual.
  • Complete Daily Meat Department Recaps as required by the Executive Chef.
  • Assist Inventory Manager with taking inventory of meat and poultry storage rooms.
  • Ensure Meat Department personnel are punctual, uniformed, and maintain personal appearance and hygiene according to company policy.
Key Responsibilities:
  • Operational Efficiency: Ensure smooth day-to-day operations in the Meat Department.
  • Leadership: Direct and support direct reports, promoting a positive work environment.
  • Quality Control: Maintain high-quality standards in meat and poultry preparation.
  • Compliance: Ensure adherence to food safety regulations and company policies.
Required Skills and Qualifications:
  • Minimum two years' experience as a Head Butcher in an upscale environment (shipboard experience preferred).
  • Culinary school degree required.
  • Strong leadership skills in a multicultural and dynamic environment.
  • Excellent communication, problem-solving, decision-making, and interpersonal skills.
  • Superior customer service, teambuilding, and conflict resolution skills.
  • Knowledge of personalized services principles, needs assessment techniques, quality service standards, and guest satisfaction evaluation techniques.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
  • Intermediate computer software skills required.
  • Good understanding of basic accounting principles such as numbering flow, debits/credits, adjusting entries, and corrections.
