- You will be responsible for leading and mentoring a team of talented individuals to ensure seamless execution of kitchen operations.
- Maintaining exceptional food knowledge and staying up-to-date on culinary trends is crucial in this role.
- We are looking for someone who can read, understand, and follow recipes with precision while consistently delivering high-quality dishes according to our standards.
- The ideal candidate should be able to complete tasks efficiently, productively, and with attention to detail.
- This position requires flexibility as you may be required to work in any section of the kitchen.
- As a key member of our team, you will coordinate and supervise staff assigned to your section, delegate tasks effectively, and maintain open communication channels.
- Reviewing daily recipes, maintaining immaculate recipe folders, and following through on requests from supervisors or managers are also essential responsibilities.
- We expect our candidates to control production levels, recommend improvements, and promote cost-effective practices.
- You will prepare electronic requisitions for your section's production, verify deliveries, and report discrepancies to immediate supervisors.
- Oversight of main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and its entire food production is critical.
- Our team member must maintain Public Health standards and expectations by adhering to company protocols (US, Anvisa, Shipsan, Canadian, Australian, etc.).
- They will ensure HACCP programs are carried out correctly, maintain assigned areas in preparation for inspections, and report for duty at assigned times.
- A strong understanding of financial management principles is necessary, including cost containment through proper use, handling, and maintenance of records, reports, supplies, and equipment.
- Identifying potential expense reductions, analyzing operational problems, establishing controls, and reviewing timesheets are important responsibilities.
- Our ideal candidate will prepare various reports and letters using personal computer systems and equipment.
- Ensuring accurate requisitioning, storage, and minimal deterioration of items within acceptable timeframes is crucial.
- Conducting workstation spot checks to minimize waste and ensure efficient service is also essential.
- Motivating and managing assigned workstation functions, assigning duties and responsibilities to staff, observing and evaluating staff and work procedures, and making recommendations regarding personnel actions are key responsibilities.
- Inspecting workstations, work areas, equipment, etc. to ensure efficient service and conformance to standards is also critical.
