Head Butcher Job DescriptionAs a Head Butcher, you will play a crucial role in ensuring the smooth operation of our butcher shop. Your responsibility will be to oversee the daily activities of the team and ensure that all tasks are completed efficiently.Oversee the thawing, butchering, and preparation of meat and poultry for daily menus.Direct and supervise direct reports, providing guidance and support as needed.Ensure compliance with United States Public Health Rules and Regulations.Conduct regular inspections of the butcher shop and thawing rooms to maintain cleanliness and efficiency.Assist in requisitioning and transporting items from freezers to thawing rooms.Monitor product yields and portions to meet company standards.Maintain accurate records and complete daily recaps as required.Key Responsibilities:Thawing and butchering meat and poultry.Supervising direct reports.Ensuring compliance with health regulations.Maintaining cleanliness and efficiency in the butcher shop and thawing rooms.Requisitioning and transporting items.Monitoring product yields and portions.Recording and reporting.Requirements:A minimum of two years' experience as a Head Butcher in an upscale hotel, resort, cruise ship or convention banqueting service is required. A culinary school degree is also necessary.Strong management skills, communication, problem-solving, decision-making, and interpersonal skills are essential for this position. Superior customer service, team-building, and conflict resolution skills are also required.This position requires strong planning, coaching, organizing, staffing, controlling, and evaluating skills. Intermediate computer software skills are also necessary.The ideal candidate will have a good understanding of basic accounting principles and the ability to write reports and business correspondence.
