Job Title: Culinary Operations SupervisorAbout the Role:This is a high-profile position that requires exceptional culinary knowledge, leadership skills, and a deep understanding of kitchen operations. As a Culinary Operations Supervisor, you will oversee the preparation and presentation of food in a fast-paced kitchen environment.Main Responsibilities:Directs, coaches, supports, supervises, and evaluates direct reports to ensure seamless kitchen operations.Maintains excellent food knowledge, understands culinary terms, and prepares company recipes with precision and quality.Coordinates team members, assigns tasks, and delegates responsibilities to ensure efficient production levels.Undertakes daily recipe reviews, maintains immaculate recipe folders, and controls production levels for cost-effective improvements.Reports discrepancies in food requisitions and ensures accurate delivery.Oversight of main kitchen sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and their entire food production.Maintains Public Health standards and expectations, adhering to US, Anvisa, Shipsan, Canadian, Australian regulations within their section.Ensures HACCP program execution and readiness for announced or unannounced inspections.Reports for duty at assigned times, follows instructions, and maintains personal appearance, uniform, and hygiene according to company rules.Requirements and Qualifications:A minimum of 8 years' experience in an upscale hotel, resort, cruise ship, or convention banqueting service, including at least 2 years as Chef de Partie.Culinary school degree required.Strong management skills in multicultural environments, with excellent communication, problem-solving, decision-making, and interpersonal skills.Superior customer service, teambuilding, conflict resolution, and planning coaching organizing staffing controlling evaluating skills.Intermediate computer software skills and basic accounting principles understanding.Ability to write reports, business correspondence, and establish rapport with Senior Officers and corporate office.
