Executive Chef TournantDirects and supervises a culinary team to ensure the quality, consistency, and presentation of dishes in a dynamic kitchen environment.Key Responsibilities:Leads and evaluates direct reports, maintaining excellent food knowledge and understanding culinary terms.Prepares and maintains company recipes while ensuring quality, taste, and consistency.Coordinates and assigns tasks efficiently to complete daily objectives.Reviews and updates recipe folders regularly.Follows through on requests from supervisors or managers.Monitors production levels, recommending improvements and cost control ideas.Ensures adherence to Public Health guidelines in main kitchen sections.Maintains HACCP program compliance and prepares areas for inspections.Financial Management:Effectively manages records, supplies, and equipment to contain costs.Identifies potential expense reductions through operational analysis.Analyzes problems and establishes controls to optimize performance.Reviews timesheets and forwards them for approval.Requisitions items correctly and within acceptable timeframes.Leadership and Motivation:Monitors workstation functions and assignments to ensure efficient service.Evaluates staff and work procedures to maintain quality standards.Provides recommendations on personnel actions such as new hires and discharges.Qualifications and Education:A minimum of 5 years experience in upscale hotels, resorts, cruise ships, or convention banqueting services and at least 2 years as an Executive Chef (shipboard experience preferred).Culinary school degree required.Strong management skills in multicultural and dynamic environments.Excellent communication, problem-solving, decision-making, and interpersonal skills.Superior customer service, teamwork, and conflict resolution skills.Knowledge of principles and processes for providing personalized services.Planning, coaching, organizing, staffing, controlling, and evaluating skills.Intermediate computer software skills required.Good understanding of basic accounting principles.Ability to write reports and business correspondence.
