Job Title: Culinary ManagerThe Culinary Manager is a pivotal role in our esteemed culinary team. This exceptional individual will lead by example, ensuring seamless execution of menus and exceptional service standards.Responsibilities include:Directing, coaching, supporting, supervising, and evaluating direct reports to ensure peak performance.Maintaining outstanding food knowledge and understanding culinary terms to drive menu innovation.Executing recipes with precision, upholding quality and consistency across all menu items.Completing tasks efficiently and productively, maintaining productivity benchmarks.Leading cross-functional teams, coordinating daily operations, and driving process improvements.Ensuring Public Health standards are upheld, adhering to HACCP protocols.Maintaining assigned areas for inspections, reporting discrepancies, and implementing corrective actions.Reporting for duty at assigned times, meeting personal appearance, uniform, and hygiene standards.Financial Responsibilities:Controlling costs through resource optimization, maintaining accurate records, supplies, and equipment inventory.Identifying cost-saving opportunities through effective cost control measures.Analyzing operational issues, establishing controls, and implementing process improvements.Reviewing timesheets, forwarding them for approval, and ensuring timely payment.Preparing various reports and letters using computer systems and equipment.Requisitioning items in correct quantities within acceptable timeframes, following established control procedures.Motivational Responsibilities:Monitoring workstation functions, managing staff assignments, and ensuring efficient service delivery.Evaluating staff performance and work procedures to maintain high-quality standards and service levels.Providing recommendations on personnel actions to ensure adequate staffing and talent development.Inspecting workstations, work areas, equipment, and ensuring conformance to standards.Qualifications and Education:A minimum of 8 years' experience in an upscale hotel or resort, with 2 years as a Culinary Manager (shipboard experience preferred).Culinary school degree required, with strong management skills in a multicultural environment.Excellent communication, problem-solving, decision-making, and interpersonal skills.Superior customer service, teambuilding, and conflict resolution skills.Knowledge of personalized services, including needs assessment techniques and guest satisfaction evaluation techniques.Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.Possesses intermediate computer software skills and basic accounting principles.Ability to write reports and establish rapport with senior officers and the corporate office.
