Restaurant Kitchen Supervisor

**Job Overview**
As kitchen supervisor, you’ll be leading a small army of kitchen porters and overseeing the day to day running of the kitchen, including cleaning the equipment, checking supplies and rotating food stock. is responsible for managing the overall kitchen operations, ensuring that the kitchen employees follow sanitary procedures while doing their high-quality and maximum productivity tasks. Kitchen supervisors manage inventories, checking the adequacy of food supplies and kitchen equipment. A kitchen supervisor must have excellent communication and leadership skills, especially with responding to customers' inquiries and concerns and resolving complaints.
**Responsibilities and Duties**
- Overseeing all the activities, managing on time and smooth kitchen operations with zero customer complaint on food.
- Overseeing proper and balanced allocation of jobs amongst all the production staffs as well staff leave schedule.
- Checking attendance of all Production Staff and taking appropriate action in case of any absence.
- Ensure regular briefing session everyday between all the production staff to discuss previous day's area of concerns/mistakes/defects and guide improvement. Providing and atmosphere where everyone feels free to speak their mind for better performance.
- Ensuring workplace harmony by treating all the staff members with respect and providing fair opportunity to grow as per individual potential capabilities
- Overseeing optimum materials requisitions and verifying the quality and quantity of raw materials received as per requisitions given.
- Overseeing and ensuring preparations for production (settings) are ready in all respect before 12 Noon for Lunch shift and before 7 PM for dinner shift.
- Providing an environment in the production/kitchen department where manpower training/handholding gets top priority as per the individual capabilities/potentials of people and develop them accordingly for higher/additional responsibilities.
- Update about manpower requirements well in advance and help sourcing manpower as far as possible.
- Ensuring and approving quality and taste of guest food as well as staff food.
- Implementing Cost control/Cut waste policy in the production/kitchen department and make everyone conscious about that while ensuring quality and taste of the set standard.
- Approving and ensuring perfect portion size of each and every items as per the set standard (Indian, Chinese, Tandoor & Pantry items).
- Ensuring personal hygiene of production team and kitchen hygiene at all time.
- Strictly maintaining discipline of production staff inside Dhaba at all time.
- Update if there is requirement of kitchen equipment and ensure Chef to purchase them on priority basis, along with Purchase Assistant.
- Overseeing and ensuring proper handling of Chulha/Gas Line/ Kitchen/Electrical equipment inside the kitchen for smooth functioning and update immediately on requirement of any repair or preventive maintenance.
