Roles and Responsibilities 1. New Product Development: Lead and manage the development of new chicken product recipes, including formulation, sensory evaluation, and documentation. Collaborate with R&D, marketing, and operations teams to develop innovative chicken product concepts that meet customer and consumer needs. 2. Production Optimization: Collaborate with operations and production teams to optimize production processes for chicken products, including cooking, marinating, and seasoning. Develop and implement standard operating procedures (SOPs) to ensure consistent and efficient production of chicken products. 3. Cross-functional Collaboration: Work closely with cross-functional teams, including R&D, marketing, operations, and quality assurance, to ensure alignment and execution of commercialization plans. Collaborate with marketing to develop product positioning, pricing, and packaging strategies. 4. Quality Assurance: Ensure that all chicken products meet the company's quality standards and comply with relevant food safety regulations. Establish and maintain robust quality control measures, conduct quality audits, and implement corrective actions as needed. Develop and maintain appropriate documentation throughout the commercialization process. 5. Supplier Management: Collaborate with suppliers to source raw materials and ingredients for chicken products, ensuring quality, consistency, and timely delivery. Establish strong relationships with suppliers to ensure a reliable and efficient supply chain operation. 6. Documentation and Reporting: Maintain accurate and up-to-date documentation of all commercialization activities, including recipes, specifications, production records, and reports. Generate regular reports on project status, performance metrics, and recommendations for improvement. 7. Culinary Expertise: Utilize culinary expertise to develop and improve chicken product recipes, create unique flavour profiles, and ensure culinary excellence in all chicken products produced by the commissary. 8. Cost Optimization: The Commercialization Manager Chef will work closely with the procurement and production teams to optimize the cost while maintaining quality and flavour consistency. This includes identifying cost-effective ingredient alternatives, optimizing ingredient usage, and managing inventory to minimize waste and reduce costs. Marketing and Sales Support: 9. Collaborating with marketing and sales teams to develop marketing strategies, sales materials, and product launch plans for new products. Providing technical support to sales team and customers, addressing inquiries, providing product information, and conducting product demonstrations as needed. Monitoring market feedback and consumer trends to identify opportunities for product improvement or new product development. 10. Documentation and Reporting: Maintaining accurate records of all commercialization activities, including product specifications, formulation changes, production trials, quality test results, and other relevant data. Generating reports on project progress, production metrics, and commercialization status to management and other stakeholders. Ensuring compliance with internal documentation and reporting requirements. Desired Candidate Profile Culinary degree or equivalent culinary certification. Technical knowledge: The Commercialization Manager Chef should have a solid understanding of food science, food technology, and food safety principles to develop safe and stable seasoning formulations. Project management skills: The Commercialization Manager Chef should have excellent project management skills, including the ability to plan, organize, and execute complex projects, manage resources, and resolve issues to achieve project goals. Analytical skills: The Commercialization Manager Chef should have strong analytical skills to conduct sensory evaluations, analyse data, and make data-driven decisions to optimize seasoning formulations and ensure product quality. Industry knowledge: The Commercialization Manager Chef should have a good understanding of the industry, including market trends, regulatory requirements, and supplier landscape.
