Responsibilities
  • Design and develop creative pastry menus according to the hotel's culinary standards and guest preferences.
  • Supervise the production of pastries, desserts, and baked goods to ensure consistent quality, taste, and presentation.
  • Lead and manage a team of pastry chefs and bakers, offering guidance, training, and motivation for optimal performance.
  • Monitor pastry ingredient inventory levels, placing orders as necessary to maintain stock levels while reducing waste.
  • Implement quality control measures to maintain excellence standards in pastry production.
  • Ensure compliance with food safety and sanitation regulations, as well as internal policies and procedures.
  • Stay updated on industry trends and innovations in pastry techniques, ingredients, and presentation styles.
  • Foster a guest-centric approach to pastry production, seeking feedback and making adjustments for guest satisfaction.

This role requires strategic thinking, strong leadership, and a focus on delivering exceptional guest experiences while maximizing revenue and profitability.

Leading the Discipline Teams
  • Utilizes interpersonal and communication skills to lead, influence, and encourage others.
  • Encourages and builds mutual trust, respect, and cooperation among team members.
  • Serves as a role model to demonstrate appropriate behaviors.
  • Ensures and maintains the productivity level of employees.
  • Supervises pastry preparation shift operations.
  • Establishes and maintains open, collaborative relationships with employees.
  • Communicates performance expectations for each position.
  • Leads shifts and participates in food preparation.
Ensuring Culinary Standards and Responsibilities are met
  • Develops new ideas and items for the pastry kitchen.
  • Must hold a HACCP Level 2 or 3 certification.
  • Oversees all aspects of pastry production, ensuring consistency and quality.
  • Collaborates with kitchen staff to develop dessert menus.
Ensuring Exceptional Customer Service
  • Provides outstanding customer service and accommodates special dietary needs or requests.
  • Manages day-to-day operations to meet customer expectations.
  • Supports service by assisting employees to understand guest needs.
  • Responds to and resolves guest problems and complaints.
  • Emphasizes guest satisfaction during meetings and focuses on improvement.
Maintaining Culinary Goals
  • Supports achievement of culinary goals related to pastry products.
  • Provides guidance for daily pastry operations work.
  • Manages food and beverage portion and waste controls.
  • Oversees supplies and inventories within budget.
Managing and Conducting Human Resource Activities
  • Identifies developmental needs of others and provides coaching.
  • Trains staff on menu items and unique tastes.
  • Ensures fair administration of property policies.
  • Reviews staffing levels to meet operational needs.
Additional Responsibilities
  • Provides information to supervisors, co-workers, and subordinates.
  • Analyzes information to solve problems.
  • Attends and participates in all relevant meetings.
Qualifications

High school diploma or GED; 8 years' experience in culinary, food and beverage, or related field.

OR

2-year degree in Culinary Arts or related major; 5 years' experience in culinary, food and beverage, or related field.
